What do health and food bloggers cook when they’re at home? Well you’re about to find out because Aga Rangemaster have put together a selection of 24 healthy eating recipes, all from bloggers, including me!
They got in touch at the beginning of the year to find out if I’d be keen to contribute and of course I said yes. The brief was to submit a healthy recipe. I wanted to include something that was a firm staple of mine as well as something that was a little interesting so I went with my Black Coconut Rice & Mango recipe. It’s so easy to make, is really filling and tastes like a plate of tropical sunshine. Best of all, you can have it for dessert, as well as for breakfast.
Whenever we’ve got a lazy morning or have some time to sit down and eat together, this is one of Tom’s request. Obviously, we do need to be fairly organised for this as you need to ensure you’ve got all the ingredients but we generally keep cans of coconut milk and black rice in the cupboard, it’s just the mango we have to remember!
