I came up with this little powerhouse of a smoothie when I was taking part in Veganuary. I hate being hungry, especially shortly after I’d had breakfast. So what to do about it?
I got experimenting and adding silken tofu to a smoothie was just life-changing. For anyone who balks at the idea of tofu in a smoothie (stop pulling that face!), don’t diss it until you’ve tried it. Silken tofu is often used in puddings (you can make a great Reese’s Peanut Butter Cup using silken tofu) so it makes sense that it goes well in a smoothie. Don’t forget, it’s also rather creamy so it’s like a big giant ice-creamy smoothie. Without the ice cream. Seriously, it’s that good.
I really love this with blueberries but you can add any fruit that you prefer. Even a bit of green veg. Spinach goes well. I’ve added brazil nuts to this also as I try and get a few brazil nuts into my diet for the selenium and vitamin E. And the flaxseed which is high in fibre and omega-3’s. Putting all of this into smoothies means that if you’re short of time, you can get the good stuff into your body in one go.
Ingredients
- ½ banana
- Handful of blueberries
- ½ pack chilled Silken Tofu (approximately 150g)
- 4 Brazil nuts
- 2 tablespoons of flaxseed
- 2 cups Zico coconut water
- Seeds for sprinkling on top (e.g. pumpkin, sunflower)
Method
- Add everything together in a blender and blend well.
- Serve immediately.
